Coconut Amaranth Cookies

Ingredients for 1 servings:

  • 80 g oil (coconut oil)
  • 50 g cane sugar (original sugar)
  • 25 g sweetener (Sukrin+)
  • 1 egg(s)
  • 125 g spelt (freshly ground and sieved)
  • ½ tsp baking powder
  • 1 pinch of salt
  • 100 g desiccated coconut
  • 15 g amaranth – Poffies

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Combine coconut oil, egg, and sugar, then knead in the dry ingredients. This produces a rather firm dough that can be easily formed into small, approximately 2-cm balls by hand. Place these balls on a baking sheet lined with baking paper and flatten slightly. Bake in a preheated oven at 175 degrees Celsius (convection oven) for 15 minutes, then let cool.
