Ingredients for 1 servings:
- 220 g butter
- 130 g brown sugar
- 50 g sugar
- 2 eggs
- 200 g flour
- 1 tsp baking powder
- 1 pinch of salt
- 1 banana(s), small
- 200 g oat flakes, fine
- 200 g nuts, chopped
- n. B. Chocolate coating
Instructions
Working time approx. 40 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 30 minutes
with nuts, makes 80 small cookies
Preheat the oven to 170°C (fan/convection oven) and line a baking sheet with baking paper. Cream the butter with both types of sugar until light and creamy. Gradually beat in the eggs, about 30 seconds each. Sift the flour with the baking powder over the mixture and stir in with the salt. Peel the banana, mash it finely with a fork, then stir in the oats and nuts until a smooth dough forms. Use 2 teaspoons to place small heaps onto the baking sheet, leaving some space between them, flatten slightly, and bake in the oven for 11-14 minutes until golden brown. Remove from the sheet and let cool on a wire rack. If you want to add a little extra flair, you can melt the chocolate coating in a double boiler and coat the cookies with it, if desired. If you place the cookies in heaps on the baking sheet, the cookies will be a little softer in the middle because they won’t spread too much. However, if you smooth the dough, you will have wonderfully crispy cookies all over.
