Banana-sweet potato casserole

Ingredients for 4 servings:

  • 6 bananas (plantains)
  • 6 sweet potatoes
  • 250 g crème fraîche
  • 250 g cream
  • 100g mozzarella
  • 2 shallots
  • 20 g butter
  • Nutmeg, freshly grated
  • Salt
  • pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Peel the bananas and sweet potatoes (wear gloves, as plantains are difficult to peel and will stain your hands) and slice them thinly. Peel and finely slice the shallots. Grease a baking dish with butter and alternate layers of bananas and potatoes. Mix the crème fraîche and cream, season to taste (a little more than usual; the banana and potato also need seasoning), and pour over the bananas and potatoes. Top with the mozzarella and place in the oven at 180°C. When it starts to cook around the edges, cook for another 35-40 minutes, covering with aluminum foil if necessary.
