Barberry chutney

Ingredients for 1 servings:

  • 100 g Barberries, fresh
  • 1 apple, sour, e.g. Boskoop
  • 1 onion(s), red
  • 1 tbsp freshly grated ginger, more or less if desired
  • 1 tsp curry powder, more or less if desired
  • some salt and pepper
  • some cane sugar

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Sour alternative to cranberries in game dishes

Cut the apple and onion into roughly equal-sized cubes. Heat both together with the barberries and a splash of water in a small saucepan until boiling. Season with ginger, curry, sugar, salt, and pepper. Simmer for about 20 minutes, stirring occasionally. Strain the resulting mixture through a sieve or blend it in a blender, depending on your taste. Pour the hot chutney into a screw-top jar and turn it upside down to cool. It tastes great with game as an alternative to cranberries.
