Ingredients for 1 servings:
- 2 eggs
- 125 g butter
- 200 ml milk
- 125 g sugar
- 1 tsp vanilla
- 200 g flour
- ½ pack of baking powder
- 2 tbsp spirit vinegar

light and juicy thanks to spirit vinegar
Separate the eggs, putting the yolks in a separate bowl. Beat the egg whites until stiff peaks. Beat the melted butter with the milk and sugar until creamy. Then add the vanilla. Gradually add the egg yolks to the butter and sugar mixture. Mix the flour and baking powder well and gradually stir into the butter and sugar mixture. Carefully fold in the egg whites. Finally, add a little spirit vinegar. The batter can now be refined as desired, e.g. with Nutella, chocolate flakes or jam. Then fill into muffin cases and bake in an oven preheated to 180°C for approx. 15-20 minutes. Allow the cakes to cool and garnish as desired. This quantity makes 12 muffins. Tip: I use a whisk for all steps to create a light and fluffy batter. To keep the muffins light and moist, I add a little spirit vinegar. Once the little cake is baked, you can no longer taste the vinegar.
