Basic recipe for strudel dough

Ingredients for 1 servings:

  • 300 g flour
  • 1 egg(s)
  • 3 tbsp oil
  • 1 pinch(s) of salt and sugar, each
  • Oil, for brushing
  • 100 ml water
  • Flour for the work surface

Combine the flour, egg, oil, salt, sugar, and water, first using the dough hook on a hand mixer, then knead by hand for at least 10 minutes. Alternatively: Knead all ingredients in a food processor for five minutes until you have a smooth dough. Shape the dough into a ball, brush with oil, and let it rest for 45 minutes in a hot, rinsed bowl. Roll out on a well-floured cloth (1 x 1 m) into a rectangle measuring 30 x 40 cm. Using the backs of both hands, stretch it to a size of 60 x 50 cm. Add the filling, leaving a 3 cm border all around. Roll up the strudel using the cloth, tuck in the sides, and place it on a baking sheet lined with baking paper. The baking time depends on the filling. This recipe is absolutely foolproof. I’d never dared to make a strudel before, but this one is guaranteed to be a success.
