Ingredients for 4 servings:
- 2 bunches of basil
- 4 tbsp olive oil
- 120 g low-fat curd cheese
- 200 ml natural yogurt
- salt and pepper
- 4 sheets of gelatin
- 120 ml cream, whipped until stiff
- 4 tomatoes
- Balsamic vinegar
Instructions
Working time approx. 25 minutes; Rest time approx. 30 minutes; Total time approx. 55 minutes
Finely puree the basil leaves with olive oil and mix with the low-fat quark, yogurt, and spices. Soften the gelatin, dissolve it over low heat, and fold it into the whipped cream. Stir the cream mixture into the basil quark and chill for about 30 minutes. Slice the tomatoes, drizzle with balsamic vinegar, and season. Cut out dumplings from the cooled, set mixture and arrange them on top of the tomato slices.
