Ingredients for 1 servings:
- 1 bunch of basil
- 100 g pine nuts
- 70 g Parmesan
- 50g Gorgonzola
- 3 g garlic clove(s)
- 125 ml olive oil
- salt and pepper
- Nutmeg, freshly grated
Instructions
Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 10 minutes; Total time approx. 1 day 20 minutes
Briefly toast the pine nuts in a pan with 1 tablespoon of oil. Chop the pine nuts, basil, and garlic. Grate the Parmesan cheese and dice the Gorgonzola. Process everything in a food processor or with an immersion blender until a smooth paste forms. Add the remaining spices to taste. Add the remaining oil last. Pour the pesto into jars and cover with a thin layer of olive oil. Let it sit in the refrigerator for 1 day.
