Basil pesto (Thermomix)

Ingredients for 1 servings:

  • 1 pot of basil
  • 50 g pine nuts
  • 100 g Parmesan cheese (pieces or grated)
  • 1 tsp salt
  • 200 ml olive oil, virgin
  • 2 clove(s) garlic, optional

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Pick the basil stalks from the pot as bare as possible, then wash and drain the leaves. Washing isn’t necessary, but you never know how it’s been treated beforehand. Add the Parmesan cheese to the Thermomix and chop for 10-15 seconds on speed 10. Tip: If you like, you can put it in a bowl and then weigh the basil leaves down with it. In my experience, they chop up better this way. But you can also leave it in. Then add the basil, garlic, pine nuts, salt, and olive oil to the pot. Chop everything for 20 seconds on speed 7. Serve everything or transfer it to a jar and store in the fridge. Tip: Add a layer of oil to the pesto. This way it will keep in the fridge for several weeks.
