Ingredients for 1 servings:
- 6 eggs
- 2 lemons, untreated
- 180 g sugar
- 180 g flour
- 1 ½ packets of baking powder
- 120 g butter, very soft
- 1 pinch of salt
- 100 g apricot jam
- 300 g white chocolate coating
- 75 g butter, very soft
- 200 g double cream cheese
- 800 g fondant

Batman themed cake in 3D
For the batter, separate the eggs. Beat the egg whites with a pinch of salt until stiff peaks form. Beat the egg yolks with the sugar until creamy, then add the melted butter. Zest the lemon zest, then squeeze the juice and add it to the egg yolk and butter mixture. Now add the flour and baking powder to the mixture. Finally, fold in the beaten egg whites. Line a 26cm springform pan with baking paper and pour the mixture into it. Bake at 180°C (convection oven) for about 30 minutes, then let it cool completely. In the meantime, prepare the buttercream. Melt white chocolate over a water bath and let it cool briefly. Stir in the softened butter, add the cream cheese, and mix everything until smooth. If you like, you can also add 1-2 tablespoons of apricot jam. For the Batman head, find a template online. Print it out in the right size and cut out the edges. Then, using a knife and the stencil, cut the lemon cake into the desired shape. If you like, you can round off any sharp edges to enhance the 3D effect. Use the cut-off pieces to shape the eyebrows and nose. Carefully cut the cake in half. Heat the apricot jam in the microwave for about 30 seconds at 600 watts. Spread the jam on one layer and place the second layer on top. Cover the entire cake with buttercream, including the eyebrows and nose, and place them accordingly. Then refrigerate for half an hour. Cover the cake with buttercream a second time, making sure everything is very smooth and ready for the fondant. Refrigerate the cake for another half hour. Roll out the black fondant on a little cornstarch and cover the cake with it. For the mouth area, use the stencil to cut out skin-colored fondant (2 drops of yellow edible paste + 1 drop of pink edible paste kneaded into white fondant). Then, apply them to the face with a little water and draw the mouth with a food marker. Cut out the eyes from fondant and attach them as well. If you like, you can paint them with silver food coloring.
