Delicious St. Martins men

Ingredients for 4 servings:

  • 500 g flour
  • 40 g yeast
  • 250 ml milk
  • 50 g butter
  • 50 g sugar
  • 1 egg(s)
  • 1 pinch of salt
  • ½ lemon(s), untreated, zest
  • e.g. raisins

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

This is how we bake the St. Martins men in our kindergarten.

Line a baking sheet with baking paper. Sift the flour into a bowl and make a well in the middle. Dissolve the yeast in the lukewarm milk and stir into the well along with a little flour and sugar to form a starter dough. Cover and let rise for 20 minutes. Melt the butter and beat it with the remaining sugar, the egg, the salt, the lemon zest, the starter dough, and all the flour until a smooth dough forms, until it bubbles and pulls away from the bowl. Let the yeast dough rise for another 20 minutes. Divide the dough into 4 equal pieces and form rolls. Set aside a piece of dough for each roll for the arms. Shape the rolls into figures and place the arms over them. The St. Martins can then be brushed with egg yolk, and the raisins can be used to give them faces. I let the men rest on the baking sheet for another 20 minutes. Bake the St. Martins on the second rack from the bottom at 150°C for 20-25 minutes.
