Ingredients for 1 servings:

  • 250 g butter or margarine
  • 200 g powdered sugar
  • 4 egg yolks
  • 4 egg whites
  • 2 eggs
  • 1 tbsp vanilla sugar
  • 2 tbsp rum
  • 50 g sugar
  • 175 g flour
  • 75 g cornstarch
  • 1 tsp baking powder
  • e.g. apricot jam
  • n. B. Cake icing (lemon icing)
  • possibly grease for the mold
  • possibly flour for the mold

Working time approx. 1 hour 40 minutes; Total time approx. 1 hour 40 minutes

delicious GDR Baumkuchen with apricot and lemon glaze

Preheat the oven to 190 degrees Celsius (gas mark 2-3). Line a 26 cm springform pan with baking paper or grease with butter and flour. Cream the butter until fluffy, add the powdered sugar, egg yolks, and whole eggs, and mix until foamy. Add the vanilla sugar and rum. Beat the egg whites until stiff peaks form, then add the sugar a spoonful at a time. Beat until firm, then pour over the foam. Mix the flour with the baking powder and cornstarch and sift over the mixture. Then fold everything in well with a wooden spoon. Spread 3 tablespoons of batter on the bottom of the springform pan and bake for about 10 minutes until light golden. Spread 2 tablespoons of batter on the baked batter layer and bake again until light golden. Continue until all the batter is used up. This will create 8-9 layers. Finally, bake using only top heat! Remove the cake from the oven, let it cool briefly, then turn it out onto a wire rack and let it cool. Finally, spread the cake with apricot jam, let it dry and then cover with lemon glaze.
