Bavarian bread dumplings

Ingredients for 4 servings:

  • 8 rolls, stale (or equivalent amount of dumpling bread)
  • ¼ liter milk, lukewarm
  • salt and pepper
  • 1 onion(s), finely diced
  • 30 g butter
  • 2 eggs
  • nutmeg
  • Parsley, if available

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Cut the rolls into thin slices. Sprinkle with salt and pour over the milk. Let them rest for 5 minutes, stirring occasionally to check if the rolls are soft. Sauté the diced onion in the fat (or microwave for 1-2 minutes), then add them to the bread mixture along with the eggs and parsley. Knead everything thoroughly and season with salt, pepper, and nutmeg. If the mixture is too runny, stir in flour or breadcrumbs. Form dumplings with wet hands and let them sit in lightly boiling salted water for 15-20 minutes.
