Bavarian egg salad à la Gabi

Ingredients for 4 servings:

  • 1 clove(s) garlic
  • 2 medium-sized onions, chopped
  • 1 tsp salt
  • black pepper, freshly ground
  • 1 tbsp wine vinegar
  • 8 eggs, hard-boiled, peeled, sliced
  • 150 g smoked bacon, streaky, diced
  • ½ bunch chives, cut into rolls

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Rub a salad bowl with the garlic clove. Toss the onions with salt, pepper, and vinegar. Layer the egg slices and seasoned onions in the salad bowl, alternating them. Fry the bacon cubes in a non-stick pan until golden brown and pour the rendered fat over the salad. Sprinkle with chives and serve immediately.
