BBQ Rub (cure-all)

Ingredients for 1 servings:

  • 50 g brown sugar
  • 5 tbsp paprika powder, sweet
  • 3 tbsp peppercorns, black and white
  • 3 tbsp coarse sea salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • ½ tsp cayenne pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Can be used as a dry marinade for (grilled) meat or as a general spice mix.

Crush the peppercorns and coarse sea salt in a mortar and pestle and then add it to the chopper of a hand blender. Depending on the size of your mortar, don’t add everything at once, as otherwise at least half of the peppercorns will likely fall out. I therefore grind each spoonful individually in my small mortar. Then add the remaining ingredients to the chopper and blend for about a minute. I then pour the mixture into a jar and use it to season grilled food as desired. I also use it as a substitute for granulated stock in all sorts of dishes when I think they’re missing some extra flavor. It’s a panacea in my kitchen, after all :-).
