Bean and avocado sandwich

Ingredients for 4 servings:

  • 260 g white beans
  • 1 avocado(s)
  • 1 garlic clove(s)
  • 1 tbsp lemon juice
  • 1 tbsp mayonnaise, vegan
  • 1 tsp mustard, grainy
  • ½ tsp nutmeg
  • e.g. leaf lettuce
  • e.g. cocktail tomatoes
  • 4 rolls (toast rolls), vegan

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

vegan and quickly prepared

Blend all ingredients, from beans to nutmeg, into a paste in a blender. Spread the paste thinly on the toasted rolls. Spread some lettuce on the rolls and top with another dollop of the paste. Serve garnished with cocktail tomatoes.
