Bean and kohlrabi salad

Ingredients for 2 servings:

  • 300 g beans, cleaned
  • 1 large kohlrabi
  • 1 onion(s), chopped
  • 2 garlic cloves
  • ½ bunch basil, roughly chopped
  • 1 tbsp sunflower seeds, roasted without fat
  • 2 tbsp Balsamic vinegar – Bianco
  • 2 tbsp olive oil
  • Pepper, from the mill
  • Salt

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

SiS-compatible

Cook the beans until al dente and let cool slightly. Quarter the kohlrabi, slice it, and add it to the beans. For the dressing, whisk together the olive oil and balsamic vinegar with salt and pepper, then mince the garlic. Fold in the onions and basil and mix well with the vegetables. Finally, sprinkle the sunflower seeds on top.
