Ingredients for 4 servings:
- 400 g minced beef
- 500 g beans
- 800 g tomatoes, chopped
- 100 ml vegetable stock
- 4 tbsp tomato paste
- 4 carrots
- 2 zucchinis
- 2 onions, diced
- 2 garlic cloves, chopped
- olive oil
- salt and pepper
- Parsley, chopped

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes
High protein, low carb
Dice the beans, carrots, and zucchini and cook in salted water for about 6 minutes. Meanwhile, sauté the diced onion and chopped garlic in olive oil. Then, briefly fry the minced meat with a spatula until crumbly. Season with salt and pepper, then deglaze with the chopped tomatoes and add about 100 ml of vegetable stock. Stir in the tomato paste and chopped parsley. Drain the vegetables and add them to the pan. Simmer everything for 5 minutes over medium heat and serve.
