Bean and potato pot

Ingredients for 4 servings:

  • 1 large onion(s)
  • 500 g minced meat
  • 3 bell peppers, colored
  • 1 gr. can/n beans, white
  • 1 gr. can/n kidney beans
  • 1 kg potatoes
  • 400 ml tomato(s), pureed
  • 300 ml vegetable stock
  • salt and pepper
  • Paprika powder
  • Cayenne pepper
  • curry powder
  • marjoram
  • oregano
  • some oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Finely chop the onion, peel and dice the potatoes, and wash and dice the bell peppers. Heat a little oil in a large pot and fry the onion until translucent. Add the minced meat and season with salt and pepper. Once the minced meat is well browned, add the potatoes and bell peppers and fry for a while. Add the vegetable stock and passata, bring to a boil, and simmer over medium heat for about 20 minutes. Then add the kidney beans and white beans, stir well, and heat through. Season to taste.
