Bean and rice pot

Ingredients for 1 servings:

  • 250 g beans, green (flat pods!)
  • 70 g brown rice
  • 1 tsp vegetable stock powder
  • 250 g tomatoes
  • pepper
  • Chili powder or paprika powder
  • Fresh herbs, e.g. parsley, basil, oregano
  • 30 g mozzarella, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Wash the beans thoroughly and cook in boiling water for about 5-10 minutes. Drain the water and let the beans cool. Cook the rice according to the package instructions along with the vegetable stock powder. Cut the tomatoes into medium-sized pieces and slice the cooked beans. Add both to the cooked rice and mix. Season with pepper and, if you like things spicy, chili powder or hot paprika. Add herbs such as parsley, basil, and oregano and mix everything well again. Finally, sprinkle with grated mozzarella and enjoy.
