Ingredients for 3 servings:
- 500 g beans (green beans)
- 1 large onion(s) (vegetable onion)
- 1 garlic
- 1 tbsp oil
- 125 ml vegetable stock
- Salt
- Pepper, white
- 250 g medium-sized tomatoes
- ½ bunch thyme
- 300g mozzarella
Instructions
Working time approx. 45 minutes; Total time approx. 45 minutes
Trim, wash, and break the beans into pieces (or use frozen beans). Peel the onion and garlic and finely dice. Heat the oil, sauté the onion and garlic until translucent. Add the beans and sauté briefly. Deglaze with the stock. Season with salt and pepper. Cover and simmer over medium heat for about 1/4 hour. Meanwhile, preheat the oven to 225°C. Wash the tomatoes, remove the stems, and slice them. Wash the thyme and pick off the leaves. Drain the mozzarella and slice it thinly. Layer the beans and tomatoes in a shallow dish. Season with salt and pepper. Sprinkle half of the thyme on top. Top the casserole with mozzarella and sprinkle with the remaining thyme. Bake in the oven for 10-15 minutes until golden brown.
