Bean soup special

Ingredients for 6 servings:

  • 1 kg beans, green, fresh
  • 200 g tomatoes, dried
  • 2 onions
  • 3 carrots
  • 100 g celery
  • 50 g cauliflower
  • 2 stalk(s) leeks
  • 1 bunch of parsley
  • 4 potatoes
  • 600 g smoked smoked pork
  • 2 tbsp clarified butter
  • 1 liter vegetable broth
  • 3 tbsp savory, freshly chopped
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 35 minutes

Wash all vegetables, peel if necessary, trim, and chop very finely. Cut the smoked pork into small cubes with sides measuring approximately 1 cm. Melt the clarified butter in a pot, add the diced onions, and let them become translucent. Add the chopped beans (1-2 cm), the remaining vegetables, and the diced potatoes, and fry briefly. Pour in the stock. Simmer for approximately 20-25 minutes, then add the chopped smoked pork and the chopped tomatoes. Add the savory and simmer for another 20 minutes. Season with salt and pepper, and the bean soup is ready.
