Pasta in vegetable and feta sauce

Ingredients for 4 servings:

  • 3 small onions
  • 1 garlic clove(s)
  • 3 m.-large zucchini
  • 1 pack of chopped tomatoes (500 g)
  • 250 g pasta (farfalle)
  • salt and pepper
  • 1 tbsp olive oil
  • some thyme stalks
  • 1 tsp vegetable broth, granulated
  • 100 g whipped cream
  • 200 g feta cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Dice the onions and garlic. Cut the zucchini into sticks. Drain the tomatoes. Cook the pasta in salted water according to the package instructions. Heat the oil. Sauté the onions. Add half of the thyme leaves, the tomatoes, and the garlic. Season with vegetable stock, salt, and pepper. Pour in the cream and bring to a boil. Add the zucchini sticks and simmer over low heat for another 3-4 minutes. Drain the pasta and let it drain. Cut the feta cheese into bite-sized cubes. Bring the sauce back to a boil and immediately serve the pasta with the hot sauce. Sprinkle the cheese on top and garnish with the remaining thyme leaves to serve.
