Bean sprout toast

Ingredients for 2 servings:

  • 10 g butter
  • 1 clove(s) garlic
  • 2 slices of bread (wholemeal bread)
  • some parsley
  • Thyme, fresh or dried
  • 80 g sprouts (mung bean sprouts), germinated for 3 days
  • 50 g cheese, Appenzeller or Emmental
  • 2 tomatoes
  • Sea salt
  • pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Combine butter and garlic. Brush the mixture onto toasted slices. Rinse the mung beans thoroughly in a plastic sieve, drain, and sort. Coarsely grate the cheese and mix it with the sprouts along with the fresh herbs. Slice the tomatoes and place them on the buttered whole-grain bread slices. Sprinkle with salt and pepper. Pile the sprout mixture thickly onto the slices. Bake in the oven at 225 degrees C for about 15 minutes.
