Beans – Quinces – Vegetables

Ingredients for 6 servings:

  • 500 g beans, green
  • Salt
  • 3 onions, red
  • 1 large quince(s)
  • 1 tbsp lemon juice
  • ½ bunch savory
  • 2 tbsp olive oil
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Blanch the prepared beans in salted water for about 5 minutes, then drain. Zest and wash the quince, quarter it, remove the core, and cut it into approximately 1 cm cubes. Toss with lemon juice to prevent the quince from browning. Cut the peeled onions into thin pieces. Fry the onions and quince in olive oil for about 5 minutes. Add the beans and savory and fry for another 2 minutes. Season with salt and pepper. Serve as a side dish, for example, with venison saltimbocca (recipe also in my profile).
