Ingredients
 

  • 1,5 kg Beef bones [with meat]
  • 2 St Clove of garlic [peeled and crushed]
  • 6 St Bay leaf
  • 10 St Clove
  • 2 St Onion [peeled and halved]
  • 1 St Parsley root [peeled and sliced]
  • 0,25 St Celery bulb [peeled and quartered]
  • 3 St Carrot [peeled and sliced]
  • 1 bunch Spring onions [cleaned and sliced]
  • 1 St Broccoli handle [chopped up]
  • 10 St Peppercorns [crushed]
  • 6 tsp Salt
  • 20 g Chopped ginger
  • 1 tbsp Dried thyme
  • 50 ml Walnut oil
  • 3 l Water

  • Prepare vegetables and spices as indicated in the list of ingredients

  • Roast the onion cut surfaces in a large saucepan without oil
  • add oil; add the beef bones and roast them briefly on all sides
  • Deglaze with water
  • Add the prepared spices and vegetables
  • Fill up with water until everything is covered
  • Bring to the boil and then simmer for 4 hours (skim off any foam that occurs as you wish) the foam consists of the dissolved protein from the meat bones and clouds the broth
  • pass through sieve and / or kitchen towel
