Beef curry in coconut sauce

Ingredients for 4 servings:

  • 500 g beef fillet(s)
  • 1 tsp ginger, finely chopped
  • 1 onion(s)
  • 2 garlic cloves
  • 1 tbsp curry paste, green
  • 250 ml coconut milk
  • 2 tbsp oil
  • Salt
  • pepper
  • mint

Instructions

Peel the onion and slice into thin rings. Finely dice the garlic. Cut the meat into approximately 1 cm thick strips, sear in hot oil, seasoning with salt and pepper, then set aside. Sauté the sliced ​​onion, ginger, and garlic in the remaining fat. Before they brown, add the spice paste and fry. Top with the coconut milk. Simmer over medium heat for 10 minutes, stirring frequently to combine into a thick sauce. Add the meat. Season to taste and sprinkle with mint. Serve with rice.
