Beef Fillet with Mango and Sweet Potato (Felix Von Jascheroff)

Beef:

  • 3 Pc. Beef medallions 180 gr.
  • 3 tbsp Olive oil
  • 1 Pc. Chopped onion
  • 1 tbsp Chopped coriander leaves
  • Pepper
  • 1 Pc. Lime
  • Brown sugar
  • 1 Pc. Sweet potato

Mango and chilli salad:

  • 2 Pc. Mangoes
  • 0,5 Pc. Red chilli
  • 1 Pc. Lime
  • 1 tbsp Coriander leaves
  • 1 tsp Grated ginger
  • 4 Pc. Tomatoes
  • 1 Pc. Onion red
  • 1 Pc. Clove of garlic
  • Salt
  • Pepper
  1. Peel the sweet potatoes, cut them into large slices and grill them on the grill barrel until they are cooked.
  2. Salt the meat on both sides and add lightly sugar. Marinate the steaks with olive oil, onions, coriander and pepper, leave for 10 minutes. Then grill on both sides of the grill and let rest on the fire barrel.
  3. Peel the mango, cut into slices and grill on the bin.
  4. Halve tomatoes and squeeze them on a lemon squeezer. Mix the juice of the tomato, olive oil and lime juice into a dressing. Cut the chilli into small slices, depending on the amount of spiciness you want. Coarsely grate the ginger and season with lime zest, salt and pepper.
  5. Cut the red onion and tomato pulp into slices. Finally add the grilled mango in strips. Mix everything together.
  6. Put the brown sugar and pepper on top of the meat and turn again so that it can caramelize.
