Beef fillet wrapped in horseradish and Parma ham

Ingredients for 4 servings:

  • 1 kg beef fillet(s), whole, well hung
  • 12 slices of Parma ham
  • 2 tbsp horseradish
  • Sea salt, from the mill
  • Pepper, from the mill, black

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

Remove the beef fillet from the refrigerator for 1 hour before cooking. Preheat the oven to 180°C fan/convection oven. Wash the fillet, pat dry, and sprinkle with sea salt and black pepper, then brush all over with horseradish. Wrap the fillet completely in Parma ham. There should be no exposed areas. Place baking paper on a rack in the oven and place the beef fillet on top. The baking paper is only there to catch any excess liquid (there isn’t much) and to avoid cleaning the oven. Time: This depends largely on the thickness of the fillet. Do you have the end, the middle, or the beginning? If it’s thin, then about 35 minutes, and for thicker pieces, 45 minutes. Done! It’s incredibly easy to make and tastes absolutely delicious. No sauce is needed. Add side dishes to taste. It’s also great for guests when you’re short on time!
