Beef ham carpaccio

Ingredients for 2 servings:

  • 160 g ham (beef ham), thinly sliced
  • 100 g mixed leaf salad, iceberg lettuce, oak leaf lettuce, arugula, etc.
  • 2 tbsp cress
  • 1 tbsp parsley, flat, chopped
  • 20 g pine nuts
  • 2 tbsp olive oil
  • 80 ml balsamic vinegar
  • 1 tsp sugar
  • 1 clove(s) garlic, very finely chopped
  • n. B. Pfeffer
  • possibly salt

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Lightly brown the pine nuts in a pan and immediately pour onto a plate. Heat the balsamic vinegar and sugar in a pan and reduce by a third. Remove the pan from the heat, stir in the garlic and gradually add the olive oil. Spread a few drops of the balsamic vinegar mixture on one half of each plate. Arrange the beef ham on top and season with pepper (and salt if desired). Arrange the mixed leaf salad, prepared as usual, on the empty plates and sprinkle with cress and parsley. Drizzle everything with the balsamic vinegar mixture and scatter with the pine nuts. Serve with oven-fresh baguette.
