Carpaccio of boiled beef with spring onions and croutons

Ingredients for 4 servings:

  • 1 kg beef (boiled beef)
  • 1 liter of water
  • 10 peppercorns
  • 6 carnations
  • 6 juniper berries
  • 3 small bay leaves
  • 1 large onion(s), quartered
  • 1 tomato(s), quartered
  • 1 bunch of spring onions
  • 3 tbsp vinegar (wine vinegar)
  • Salt and pepper, from the mill
  • 10 tbsp oil
  • 20 g butter
  • 2 slice(s) white bread, cut into very fine cubes

Instructions

Working time approx. 30 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 30 minutes

Place the boiled beef in boiling water with peppercorns, cloves, juniper berries, bay leaves, onions, and tomatoes. Cook for 2.5 hours. Allow the meat to cool completely. Then cut into very thin slices. Place them on a platter. Slice the spring onions into thin rings. Spread them over the meat. Prepare a marinade with vinegar, oil, pepper, and salt. Heat butter in a pan and toast the bread cubes until light brown. Pour the marinade over the meat and spring onions and scatter the bread cubes over the meat. Serve immediately.
