  • 1 kg beef heart
  • salt and pepper
  • marjoram
  • Thyme
  • 80 g bacon
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 bunch of soup vegetables
  • 2 gherkins (from the jar)
  • 2 tbsp tomato paste
  • 4 m.-sized potatoes

Halve the heart, rinse thoroughly, and slice. Season with salt, pepper, thyme, and marjoram. Sauté the finely diced bacon and add the heart with the finely chopped onion and grated garlic, and roast. Add the finely sliced ​​vegetables, gherkins, and tomato paste, and roast briefly. Fill with a finger’s worth of water. Cover and simmer slowly for about 1.5 hours until tender. Add the finely sliced ​​potatoes and cook until the potatoes begin to fall apart. Season again before serving.
