Ingredients for 5 servings:

  • 500 g heart(s) (beef heart)
  • salt water
  • 1 onion(s)
  • 3 tbsp mayonnaise
  • 2 tbsp vinegar
  • 2 tsp salt
  • 1 tsp sugar
  • 1 tsp pepper
  • 1 bay leaf
  • some peppercorns
  • some carnations

Instructions

Working time approx. 30 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 1 hour 30 minutes; Total time approx. 2 hours 10 minutes

Boil the beef heart in lightly salted water with the spices (bay leaf, cloves, peppercorns) for about 1.5-2 hours, then let it cool in the broth (!). Once the beef heart has cooled, trim any fat and any remaining veins and grate it coarsely. Slice the onion very thinly and marinate with vinegar, salt, and sugar for about 10 minutes. Lightly squeeze the onions, add them to the grated beef heart, and mix with mayonnaise and finely ground pepper. If desired, add a little more acidity with the remaining onion marinade. The salad has an intense, spicy, peppery, and slightly tart flavor. Be careful with the salt at the end—don’t forget that the beef heart was cooked in salted water; the onions were marinated, and mayo already contains salt. It is best to let the finished salad stand for about 15 minutes, mix it again and only then season with salt if necessary.
