Beef Heart
The perfect beef heart recipe with a picture and simple step-by-step instructions.
- 1 ,5 kg Beef heart
- 1 Onion
- 3 Bay leaves
- 1 Streaky bacon
- 1 Salt from the mill
- 1 Pepper from the grinder
- 4 Juniper berries
Wash the heart thoroughly
Remove tendons and blood clots
Cut into approx. 2cm thick slices
Roughly chop the bacon and onions
Sear and pepper in the roaster
Place the meat on top and fry it
Add the juniper berries and bay leaves
Pour around 400ml of water
to close the lid
Preheat the oven – 200 degrees
Let cook with convection for 45 minutes
Pour the water back on – lightly salt
Let cook for another 60 minutes at 80 degrees
Remove meat
Pull a sauce out of the roast stock
Optionally refine with red wine
