Beef in coconut milk with red curry

Ingredients for 4 servings:

  • 750 g beef (steak or fillet)
  • 1 can of bamboo shoots
  • 1 broccoli
  • 2 cans of coconut milk
  • 1 cup of cream
  • 2 tbsp red curry paste
  • Soy sauce
  • Chili powder or cayenne pepper
  • rice

Instructions

Cut the meat into small strips and fry in oil in a wok until well browned. Add a little soy sauce (about 2 tsp). Stir briefly to allow the meat to absorb it. Then add the drained bamboo shoots and finely torn and washed broccoli. Continue frying for about 5 minutes. Thoroughly mix the coconut milk with the curry paste (otherwise the paste will crumble easily) and add it along with the cup of cream. Stir, cover, and simmer gently for about 5-10 minutes, depending on how crunchy you want the vegetables. If you like it very spicy, you can add chili, cayenne pepper, or a little more curry paste to taste. Serve with rice. Tip: Any meat that requires a quick fry is suitable for this, including chicken or turkey breast, pork fillet, or schnitzel. You can also prepare just the sauce with the vegetables and serve fried fish or crispy fried duck breast separately. Instead of broccoli, crunchy green beans also taste great.
