Beef jerky with spicy marinade à la Tyko

Ingredients for 2 servings:

  • 2 beef roulades
  • 1 ½ tsp smoked salt
  • 1 tsp lemongrass powder
  • 1 tsp garlic powder
  • ½ tsp paprika powder
  • 1 tbsp Worcestershire sauce
  • 5 drops of oyster sauce
  • ½ tsp pepper

Instructions

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 6 hours; Total time approx. 1 day 6 hours 10 minutes

Cut the meat into bite-sized pieces. Mix the spices, then spread the marinade over the meat and mix well. The marinade should be thick and adhere completely to the meat. No marinade should be left over. If it’s too dry, add another tablespoon of Worcestershire sauce. Then place the meat in a plastic container or bag and refrigerate for 24 hours. If everything is done correctly, no liquid will leak from the meat. Now dehydrate the meat for 2 hours at 46°C, then for 2 hours at 65°C, and then for another 2 hours at 46°C.
