Marinated mushrooms with onions

Ingredients for 8 servings:

  • 1 kg mushrooms
  • 8 peppercorns
  • 4 allspice berries
  • 4 tsp salt
  • 2 tbsp, heaped sugar
  • 1 bay leaf
  • 300 ml vinegar (5%)
  • 1 onion(s) for serving
  • 1 tbsp oil for serving

Working time approx. 10 minutes; Rest period approx. 1 day; Cooking/baking time approx. 35 minutes; Total time approx. 1 day 45 minutes

Clean the mushrooms, cover with water in a pot, boil without spices or salt (important! – because the spices will be added later in the marinade) for about 20 minutes, then drain in a sieve. For the marinade, add salt, sugar, pepper, allspice, bay leaf, and vinegar to 1 liter of water and bring to a boil. Add the mushrooms to the boiling marinade and simmer for about 15 minutes. While the mushrooms are still hot, transfer the marinade to sterile screw-top jars, seal the jars, turn them upside down, cover with a towel, and let them cool slowly overnight. Let stand for at least 1-2 days. Mushrooms marinated in this way will keep for about 1 year. To serve, drain the mushrooms and top with a thinly sliced ​​onion and 1 tablespoon of oil. Marinated mushrooms are eaten like antipasti in Ukraine and are a must-have on any festive table.
