Beef roulade filled with figs and dates

Ingredients for 4 servings:

  • 4 figs
  • 8 dates, dried
  • 2 onions
  • 2 garlic cloves
  • 4 roulade(s), of beef, 225 g each
  • salt and pepper
  • Cinnamon powder
  • 3 tsp mustard, hot
  • 3 tbsp almond flakes, roasted
  • 3 tbsp oil
  • 300 ml meat broth
  • 300 ml apple juice
  • 4 tbsp plain yogurt
  • 2 tsp flour

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the figs into eighths and the dried dates into quarters; dice the onions and garlic cloves. Season the beef roulades with salt, pepper, and cinnamon powder. Brush one side with 1 teaspoon of hot mustard and sprinkle with the toasted almond flakes. Place the fruit on the lower third of the meat, fold in the sides, roll up the roulades, and secure with wooden skewers or wrap with kitchen string. Heat the oil in a pan and fry the roulades until browned on all sides. Fry the onions and garlic for about 1 minute, add the meat broth and apple juice, and bring to a boil. Cover and simmer over medium heat for about 1 hour 30 minutes. Test the roulades for doneness (they can be pierced if tender), then remove from the pan. Mix the yogurt with the flour, stir into the sauce, and bring to a boil. Purée everything finely, pass through a sieve, and season with salt and pepper.
