Beef roulades à la Karin

Ingredients for 4 servings:

  • 4 beef roulades
  • Mustard, medium hot
  • 8 slices of cooked ham
  • 50 g bacon, chopped
  • Parsley, chopped
  • 2 onions, chopped
  • salt and pepper
  • Oil for frying
  • 1 shot of red wine
  • Ajvar or Ljutenica, optional

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 hours; Total time approx. 2 hours 30 minutes

Season the beef roulades with salt and pepper and spread with medium-hot mustard. Top each with two slices of ham. Lightly roast the onions, parsley, and bacon in a pan, then spread them on the ham-covered roulades. Roll up the roulades and secure them with roulade pins, for example. Brown them well in oil. If desired, you can add a little ajvar or lyutenica (from Bulgarian cuisine). Then deglaze with red wine. Add water or beef broth until the roulades are about half-covered. Simmer in a pressure cooker for about 20 minutes or in a regular pot for about 2 hours. Serve with spaetzle and either vegetables or salad. Enjoy!
