Ingredients
 

  • 1,5 kg Beef Roulade
  • 3 Sliced ​​onion
  • 3 Sliced ​​carrots
  • 6 Pickled cucumber
  • 6 Celeriac dried / homemade
  • Mustard
  • Hot pepper
  • Salt
  • Pepper from the grinder
  • 1 Paprika
  • 4 tbsp Oil

Instructions
 

  • Wash and dry the beef roulades. Beat it thinly with the meat tenderizer.
  • First sprinkle with salt, pepper and paprika, then sprinkle some mustard over the top and mix well with the spices.
  • Place the onion and cucumber slices on top and roll up the roulades, firm with a roulade needle.
  • Heat the oil in the pan and sear the roulades.
  • Take the roulades out of the pan. I put them in a pressure cooker, because in this the meat and vegetables do not lose any aromas, on the contrary, everything tastes much more intense. The meat is particularly tender. In the pan, in the same oil, briefly fry the carrots, onions and celery slices. Finally mix in the diced paprika. Then deglaze the fried vegetables and pour over the roulades.
  • Let simmer in the pot for 1.5-2 hours, in the pressure cooker it takes 30 minutes. Then take out the roulades
  • Let the roulades brown in the oven for 10 minutes at 100 °. Mix the vegetables with a blender. Then bring to the boil again briefly so that there are no more air bubbles in the sauce from mixing.
  • The special thing about this recipe is the sauce. The vegetables are very intense and naturally thickened.
