Ingredients for 4 servings:
- 6 beef roulade(s)
- 12 slices of bacon
- 6 gherkins
- 6 tsp, heaped mustard, medium hot
- 1 tbsp, heaped tomato paste
- 4 tsp, heaped spice paste, green with ginger from my other recipes
- 600 ml water
- 150 ml red wine, dry
- salt and pepper
- Allspiceón de la Vera
- 6 tbsp milk
- 3 tsp, heaped cornstarch
- 2 tbsp oil for frying
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
for First Austria Multipot or Instant Pot
Pat the roulades dry and flatten slightly if necessary. Season well on both sides and spread a teaspoon of mustard on each side. Place two slices of bacon on each side, slice the gherkins and scatter them on top. If you like, you can also add diced onions. Roll up the roulades starting from the narrow side, folding in the edges on the left and right and securing them with roulade pins. Heat a little oil in the multicooker and sear the roulades, then remove the roulades from the pot and set aside. Fry the seasoning paste together with the tomato paste and deglaze with the red wine. Allow the wine to reduce, top up with water and stir. Now add the roulades again, close the lid and set the meat program to 25 minutes. After about 10 minutes the pressure valve closes and the time counts down. After the cooking time is over, wait another 10 minutes and then release any residual steam and open the lid. Remove the roulades and keep warm. Now mix the starch with the cold milk, add it to the sauce, bring back to a boil, and season to taste. Add the roulades and serve.
