Beef Roulades with Asparagus

The perfect beef roulades with asparagus recipe with a picture and simple step-by-step instructions.

  • 200 g Fresh asparagus
  • Salt
  • 1 pinch Sugar
  • 100 g Peas
  • 3 Discs Beef roulades
  • 6 Discs Mixed with bacon, sliced
  • Pepper
  • 1 tbsp Oil
  • 1 tbsp Flour
  • 200 ml Beef broth
  1. Peel the asparagus and cook in salted water with a pinch of sugar until al dente, then third.
  2. Spread out the beef roulades on a work surface. Season on both sides with salt and pepper. Place 2 slices of bacon and 3-4 pieces of asparagus on 1 roulade. Roll up roulades and stick with skewers.
  3. Heat the oil in a pressure cooker and fry the roulades on all sides, sprinkle with the flour, pour the beef stock, bring to the boil, close the lid and simmer for about 15-20 minutes over medium heat.
  4. When the cooking time is over, open the lid, add the remaining pieces of asparagus and the peas to the sauce. Let simmer for another 2-5 minutes. Halve the beef roulades and distribute with the sauce on plates. This was served with boiled potatoes.
