Beef Roulades Filled with Green Asparagus

The perfect beef roulades filled with green asparagus recipe with a picture and simple step-by-step instructions.

  • 2 piece Beef roulades
  • 2 piece Salt and pepper
  • 2 teaspoon Garlic mustard
  • 4 thinner slices Smoked bacon streaked
  • 1 bunch Chives fresh
  • 10 Rods Fresh green asparagus
  • 1 tablespoon Clarified butter
  • 100 ml Red wine
  • 0,5 liter Beef broth
  • 1 tablespoon Chopped garden herbs

Preparation:

  1. Cut off the asparagus at the ends and peel the quarter if necessary.
  2. Wash and dry the chives and cut into fine rings.

Roulades:

  1. Spread some salt and pepper on a large cutting board, spread the roulades on top, spread a thin layer of mustard, season with salt and pepper and place 2 slices of bacon on each roulade. Now sprinkle on the chives and place the asparagus on top. Roll up the roulades and fix with roulade needles. Heat the clarified butter in a roaster and sear the roulades on all sides. Deglaze with red wine and the vegetable stock. Put the lid on the pot and simmer over medium heat for approx. 1 hour. Remove the lid and let the sauce simmer a little or thicken with a little cornstarch. Now stir the herbs into the sauce. If necessary, season with salt and pepper (maybe with a little soy sauce).
