Beef soup – Meidling style

Ingredients for 1 servings:

  • 2 liters of water
  • 1 kg beef
  • ½ kg bones (beef marrow bones)
  • 10 juniper berries
  • n. B. Salt
  • 250 g soup vegetables
  • 1 small onion(s), white
  • 1 clove(s) garlic
  • 10 peppercorns
  • 1 bay leaf

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the bones and place them in cold water, then bring to a boil. Add the meat and spices to the boiling water. Simmer the soup slowly, partially covered, for about 90 minutes, skimming off any gray foam. Wash, trim, and roughly chop the soup vegetables. Halve the unpeeled onion and add it to the soup with the vegetables. Simmer for another 60 minutes.
