Ingredients for 4 servings:
- 500 g beef fillet(s), trimmed, or other low-fat beef
- 1 small onion(s), red or shallots
- 2 gherkins, not too large
- 3 anchovy fillets in oil
- 1 tsp, heaped capers
- 2 large egg yolks
- 1 tbsp olive oil
- 1 tsp mustard or Dijon mustard
- 5 dashes Worcestershire sauce
- 1 pinch(s) of cayenne pepper
- salt and pepper
- 1 apple, sour, e.g. Boskop
- 1 tsp Pepper, red, fresh
- 1 tbsp lime juice or lemon juice
- 1 tbsp apple jelly, currant jelly or sugar
- 4 slices of fresh brown bread, very thinly sliced, approx. 3 – 4 mm

charming variation of the classic
Chop the onions, cucumber, anchovy fillets, and capers. Remove the seeds from the chili peppers and finely chop the rest. For the tartare, chop the beef fillet very finely with a knife; do not mince it. Chopping with a knife gives it a better bite. Mix all the ingredients for the tartare well and season with salt and freshly ground pepper. For the apple garnish, finely chop the anchovy fillets and immediately drizzle with the lime juice. Stir in the jelly or sugar and the chopped chili peppers. Brown the bread slices in the oven until crispy. Arrange the tartare and apple mince separately on plates and garnish with the bread chips. This dish should definitely be prepared shortly before serving. A fine Pinot Noir or Cabernet Franc goes well with it.
