Beef with soybean sprouts and soy-tangerine sauce

Ingredients for 4 servings:

  • 500 g beef fillet(s)
  • 300 g soy sprouts
  • 2 tbsp sesame oil
  • 1 piece(s) ginger
  • 2 cans of tangerine(s)
  • 1 stalk(s) leek
  • 1 garlic clove(s)
  • 1 tbsp cornstarch
  • 2 tbsp soy sauce
  • 2 tbsp sherry, dry
  • 2 tsp sugar
  • 4 tbsp soy sauce
  • 1 cup of tangerine juice
  • 6 tbsp Sherry, dry
  • 4 tbsp vinegar
  • 2 tsp sesame oil
  • 2 tsp sugar
  • 2 tsp sesame seeds

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cut the beef fillet into approximately 2 cm thick slices. For the marinade, wash the leek and cut into thin strips. Peel the garlic clove and finely chop or press it through a press. Mix the cornstarch mixed with a little cold water with the leek, garlic, and all the remaining marinade ingredients. Pour over the meat and let it sit for at least 10 minutes. Drain the bean sprouts. Peel and slice the ginger. Heat oil in a pan and briefly fry the ginger slices to flavor them, then remove them. Then fry the meat in the oil for 2 minutes. Drain the mandarin oranges, reserving the juice. Mix the meat with the sprouts and garnish with the drained mandarin orange segments. Mix all the ingredients for the soy-mandarin orange sauce together thoroughly and heat briefly, for example, in the microwave. Serve the meat with basmati rice and the soy-mandarin orange sauce.
