Beetroot foam soup with basil

Ingredients for 4 servings:

  • 350 g beetroot
  • 1 half orange(s)
  • 125 ml coconut milk (organic)
  • 1 handful of basil leaves
  • 1 tsp, heaped soup powder (organic vegetable soup)
  • ½ tsp salt
  • 1 pinch(s) of spice mix (Asian Fire)
  • ½ liter of water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Beetroot soup, vegetarian

Peel and wash the beetroot. Peel and cleanly segment the orange. Blend all ingredients together with organic coconut milk, basil, and spices. Season to taste. Then heat the soup in a saucepan, blend until frothy, and serve garnished with basil.
