Ingredients for 3 servings:
- 4 m.-large beetroot, pre-cooked
- 1 package of feta cheese
- 250 g arugula
- 3 tbsp fruit vinegar or balsamic vinegar
- salt and pepper
- 3 tbsp cane sugar or honey
- 3 tsp mustard
- tbsp olive oil
- 1 tbsp herbs e.g. E.g. parsley

Dice the beetroot, preferably wearing disposable gloves, as they stain quite a bit. Finely dice the feta cheese. Wash the arugula and spin it dry. For the dressing, first combine the vinegar with salt and pepper, stir in the sugar/honey and mustard, then whisk in the oil and finally add the herbs. Divide the beetroot, feta cheese, and arugula among plates, then pour the sauce over the top.
