Ingredients for 2 servings:
- 500 g beetroot
- ½ onion(s), finely diced
- 2 tbsp vinegar (apple cider vinegar)
- 2 dashes sweetener
- 1 pinch(s) pepper, mixed, ground
- 1 tsp oil (sesame oil), roasted

Peel and grate the beetroot (wear rubber gloves!). Place all ingredients in a bowl, mix, and let stand for a while.
