Beetroot salad with apple and onion

Ingredients for 4 servings:

  • 500 g beetroot, pre-cooked and vacuum-packed
  • 1 large apple (Boskoop)
  • 1 m.-large onion(s), red
  • n. B. vinegar
  • n. e.g. oil, e.g. B. sunflower oil
  • n. B. water
  • salt and pepper
  • Sugar
  • e.g. chives

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

very simple and nice and fresh

Drain the beetroot, but don’t throw away the juice! Cut the beetroot into pieces, wash the apple (don’t peel it!) and coarsely grate it, peel the onion and finely dice it, and place everything in a bowl. Make a dressing from the beetroot juice and the remaining ingredients and mix well with the beetroot, apple, and onion. Let it sit for at least 30 minutes. It still tastes good the next day and is a really tasty alternative to cucumber salad and the like.
